Destemming followed by a soft pressing of the grapes. The must thus obtained is cold-decanted for 12 hours. The clean fraction of the must is inoculated with selected yeasts and fermentation takes place at a temperature of 14 ° C for about 12 days. A short stay on the noble lees precedes bottling and marketing.

It is obtained from Carignano vineyards with traditional breeding that express the ancient “Latin vine” low production per vine and great quality.

The vinification takes place by leaving the must for several days in contact with the skin, the evolution of the wine took place with a short maturation of barriques and then a qualified refinement in glass.  This long-lasting vono is recommended with red meats, game and excellent cheese.

In this wine, not having been filtered, it is possible the presence of a possible deposit.

A blend of 60% Carignano with the balance made up of Syrah, Cabernet Sauvignon, Cabernet Franc and Merlot. A beautifully fresh red, a hint of structure and fine backbone of acidity but predominantly a weighty concentration of plum, dark cherry and subtle spice. Ageing in old oak has softened the texture and provided balance without adding any overt oak character. The finish is mineral with a hint of rubber and a powerful whack of bitter cherry that lifts the palate. Can be approached now but will only benefit from another 6 months in bottle.

In the Sulcis territory, on the west coast of Sardinia, an ancient vine of long acclimatization produces a generous wine, worked by the privileged nature of the soil, rich in minerals.  Stingy water, with a sunny and windy climate.  Warm, enveloping with caressing sensations of soft tannins and ripe fruit of late autumn.  The peculiar characteristics of Carignano are enhanced in the Reserve by a long refinement.

This wine is obtained from Carognano grapes from the brown lands of Sulcis, produced in vineyards located in ideal pedoclimatic conditions.  Vinified with particular care and aged in French oak barriques.  Then aged in the bottle.  It is recommended to serve preferably in a carafe.

AMARONE DELLA VALPOLICELLA

An opulent wine solidly within the classic Verona tradition.  The grape clusters are  hand-picked from hillside vineyards in Valpolicella and placed to dry for three months in special drying lofts.  The Amarone then ages in our winery.  Deep red colour with garnet highlights.  Very fruity with hints of cherry, black cherry, wild  berry fruit, chocolate.  Serve at 18 ° C.

Since 1902 the Tommasi family has dedicated itself to the art of viticulture in Valpolicella. The elegant ruby red wine is produced  with the indigenous grapes Corvina, Corvino, Rondinella and Oseleta, which are selected by hand and dried for about 4 months prior to being gently pressed.

The Amarone is th in Slavonian  oak barrels of 35 Hl. Best with red meats, game and aged cheese. Tommasi Amarone is also  the ideal companion to enjoyable conversation.
